I don't know if this recipe really came from William Shatner, but being the scifi geek I am, I'm willing to give it the benefit of the doubt. ;)

  • 2 cups flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons instant espresso powder (can substitute instant coffee)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla
  • 3/4 cup chocolate chips

Directions
  1. Preheat oven to 400 degrees F. Grease muffin tins or line with paper baking cups.
  2. In a large bowl, sift together all the dry ingredients. Make a well in the center of the mixture.
  3. In a separate bowl, beat the egg together with the milk and melted butter, then add the vanilla.
  4. Add egg mixture to the dry ingredients along with the chocolate chips, and mix until just moistened.
  5. Spoon batter into the prepared muffin cups, filling each one two-thirds full.
  6. Bake until just done, approximately 20 minutes.
