How to make it

  • Lightly grease miniature muffin pans (or larger muffin pans)
  • Cream butter and sugar
  • Add eggs one at a time
  • Mix in applesauce and spices
  • Sift together salt, baking soda and flour
  • Add to applesauce mixture, beat well
  • Stir in nuts
  • Bake at 350 degrees, 8 to 10 minutes
  • Sprinkle with powdered sugar if desired
  • Batter keeps in refrigerator
  • These muffins freeze well
  • Yield: about 80 muffins

    What a great recipe!! I love applesauce in my muffins, and maybe you already know, but It is possible cut in half the amount of fat in the batter by substituting it for applesauce, eg. in the recipe asks for 1 cup butter you just use 1/2 cup butter and 1/2 cup applesauce. They will keep their moist because of applesauce, but a lot lighter¡¡
