I loved the salt and pepper chicken at a local "Hawaiian" take out. (Sadly they didn't last too long here) My addiction was missing it's fix and I searched and found these shrimp and I like them a whole lot better than the chicken I was missing.

Ingredients
  • 2 tbsp Salt
  • 1 lb Large shrimp - unpeeled and deveined
  • 2 tsp Coarse or kosher salt
  • 1 tsp roasted Sichuan peppercorns -(ground)
  • 1 tsp Sugar
  • 2 tbsp finely chopped garlic
  • 2 tsp minced peeled fresh ginger
  • 2 tbsp finely chopped scallions
  • 2 Fresh red chile peppers (small skinny long) - coarsely chopped
  • 2 cups peanut oil; for deep frying

Directions
  1. TO CLEAN THE SHRIMP, remove the feathery legs and blot the shrimp dry with paper towels.
  2. In a small bowl, combine the coarse salt, peppercorns, and
  3. sugar and set aside.
  4. In another small bowl, combine the garlic, ginger,
  5. scallions and the chopped chilies.
  6. Heat a wok or deep skillet until it is hot and add the oil. When the oil is very hot and smoking, add the shrimp and deep-fry for about 1 minute or until they are pink. Remove them immediately with a slotted spoon and drain well. Pour off all but 1 1/2 tablespoons of the oil and reheat the wok.
  7. Add the salt-peppercorns-sugar mixture and stir-fry for 10 seconds. Add the garlic-ginger-scallion-chiles mixture and stir-fry for 10 seconds. Return the shrimp to the wok and stir-fry over high heat for about 2 minutes until the spices have thoroughly coated the outer shell of the shrimp. Transfer the shrimp to a serving platter and
  8. serve at once.
  9. These shrimp are addictive.

I go once a week to our chinese place just for these... and yes they are addictive.. I eat those, the whole string beans and the hot and sour soup ... life is good... there is another recipe in about.com.. I think that's the site.. but it uses just black pepper... I like this better!


Salt & Pepper Beef Ribs was my fav when we ordered Chinese food (in Scotland, none-the-less :) and I adored them! Never could duplicate them; I look forward to trying these... Thank you!


These sound very much like the shrimp at our local Chinese buffet place, but more flavorful. Thank you for the great post, I think they will be a hit here.

I had the best salt and pepper shrimp the last time I was in L.A. and have not been able to find anyone in Indy that makes them. Now I can make them myself. Will it work if I remove the shells?
