How to make it

  • In a small bowl whisk together soy sauce, lemon juice and olive oil.
  • Place zucchini on a shallow pan and brush both sides with soy mixture. Let rest for about 1 hour.
  • Pat dry zucchini and place on a hot grill until brown, about 4 minutes, depending on the grill. Turn and season with salt and pepper. Let cook the other side for 3 more minutes, season again with salt and pepper and place on serving plate.
  • Serve with beaten yogurt and cherry tomatoes.
  • It´s a perfect side dish for meat, poultry or fish.

    So good! I think it depends on if you use low sodium soy sauce or not if you need the salt. I used a soy sauce substitute called Coconut Aminos, and it is not loaded with salt, so I definitely added it. Added a review in the IMI II Group --------> Grilled Marinated Zucchini

    Very tasty although I don't think it needs the salt. I didn't serve it with the yogurt and tomatoes but served it as a side with my steak. I added a picture and a thread in IMI 5/18/14
