California Spinach Casserole Recipe

This makes an interesting side dish or a great dish to take to a pot luck dinner. It can be easily doubled for a large crowd and baked in a 13x9 inch baking pan.

Ingredients
- 2 (6 ounce) jars marinated artichoke hearts, drained
- 1 (16 ounce bag) cut spinach, thawed and squeezed dry
- 1/4 cup sweet onion, finely diced
- 8 ounces cream cheese, softened
- 1/3 cup milk
- 3 tablespoons butter, softened
- 1/2 cup Parmesan cheese, shredded
Directions
- Arrange artichoke hearts in bottom of greased 8 inch baking dish.
- Layer spinach over artichoke hearts.
- Sprinkle with onion.
- Beat together cream cheese, milk and butter. Spread over onion layer.
- Sprinkle with Parmesan cheese.
- (At this point, can be covered and chilled up to a day ahead.)
- Bake, uncovered, at 350 degrees for 30 to 40 minutes.
