The reason that made me make maamoul cookies,is that my wife found her grandmother's very old Maamoul molds at her house.It was like finding a treasure.

Ingredients
  • 227 grams butter
  • 1 cup flour, all purpose
  • 2 cups semolina
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking power
  • 1/4 cup granulated sugar
  • 2 Tablespoons rose flower water
  • 1 tablespoon orange flower water
  • 7 tablespoons water
  • Date filling:
  • 1 1/2 cups chopped dates
  • 6 tablespoons butter
  • Cook dates with butter over low heat for 15-20 minutes. Mash
  • occasionally until dates are completely pureed. Cool before filling.
  • Date filling is traditionally used with a flat maamoul mold, rather
  • than the rounded variety.

Directions
  1. Melt butter and cool slightly.
  2. Mix flour, semolina, salt, baking powder and sugar together.
  3. Rub melted butter into dough with fingertips until it is like fine soft meal. Cover bowl and let it rest overnight.
  4. Combine flower waters with 7 tablespoons water and
  5. sprinkle over the dough. Toss lightly with a fork to distribute
  6. liquid evenly. Mix until just combined, like pie dough.Knead 12 -15 times.
  7. Dust maamoul molds well with flour. Invert and tap gently to remove excess flour. Estimate the amount of dough need to fill maamoul mold and make a ball of dough.
  8. Flatten it out slightly and place a good tablespoon of filling in
  9. center. Close dough around filling to cover it. Pack ball into
  10. mold. Level off cookie even with the lip of the mold. Be sure you
  11. have not revealed filling or it will stick to the pan as it bakes.
  12. Tap cookies out onto the work area with a sharp firm hit to the
  13. top of the mold. Transfer cookies to baking sheet with a spatula.
  14. Bake at 300 to 325deg F about 12 minutes, until barely colored.
  15. Cool.

Oh my a real must try love dates


Hi Ahmed... very good recipe, I posted one recipe of Maamoul cookies days ago,(I wrote "Mamoul" and now I will write fine...) but I don't have the special mold... lucky you! Different from mine and delicious, I will save it. Bye for now


This one will be for my hubby. He loves dates. I do not have a proper forming device but I am certain I can get around that obstacle. Thank you once more Ahmed!!!

Those very old molds are amazing! it makes ma3mool look even more delicious!


I have like 10 ma3mool recipes - one of them is moms which is very simple but i think the secret is her "nafas" - i'll get back to u once i try yours. would make a big difference if i drop the orange water?

:( i was saying that i found maamoul molds yesterday right here in montreal:) and am finally going to make the typical maamouls!
but is it necessary to let the dough rest overnight? is 5hrs sufficient?

ps: i ll post a moroccan cookies recipes soon, i made them last night , they're divine(Grandma's peach jam and coconut covered cookies)
