Simple, fast, filling and you can serve nachos with this or tortillas cut into the soup. Or serve with warm homemade tortillas with butter. Of course I top mine off with sour cream and more cheese.

Made this for lunch, using 2 cups of frozen corn and a chopped fresh tomato since that's what I had on hand. I also used a couple of squeezes of La Victoria Salsa Brava in place of the taco seasoning. It was *so* good I ate almost the entire pot! :)
