Shrimp Braised With Tomato Chile Pepper And Capers Recipe
This is very tasty. I got this recipe from a bowling team mate. She served this at one of her parties and it was the first thing to go. Enjoy

Ingredients
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup finely chopped onion
  • 1 tablespoon chopped garlic
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon chopped fresh jalapeno
  • 1 cup Italian tomatoes with their juice
  • 1 pound large shrimp peeled and deveined
  • 1 teaspoon fine sea salt
  • 1/2 tablespoon capers

Directions
  1. Put oil and chopped onion in a large skillet.
  2. Turn heat to medium high and cook onion stirring occasionally until pale golden.
  3. Add chopped garlic then stir and when garlic is fragrant add parsley and chile pepper.
  4. Stir once or twice then add tomatoes.
  5. Turn all ingredients over once or twice then reduce heat and cook at a steady simmer.
  6. When oil floats free from the tomato add shrimp to pan along with salt and capers.
  7. Turn shrimp over several times to coat well.
  8. When shrimp have lost their shiny raw color they are done.
  9. Serve at once with the juices from the pan.

I was looking for something spicy and low fat will add some scallops and other veggies and serve it over whole grain noodles of some sort. Thanks
