How to make it

  • In 10-inch skillet cook bacon until crisp. Drain fat and return 2 tbs to skillet (leave bacon in skillet). Add onions and green peppers; cook until tender. Stir in rice and continue cooking until rice is golden. Add broth and pepper. Heat to boiling, Stir once or twice; arrange tomatoes In broth. Cover, reduce heat, and simmer 15 minutes or until rice is tender and liquid is absorbed. Fluff rice with a fork.
  • Makes 6 servings.

    The first time we tried this I used the beef broth, and tonight I tried it with chicken broth and we liked it all over again. Even my 2-year-old ate it!

    This sounds really good. We love rice and can't get enough of it in my house. This one is a must try and one I know will be a mainstay. I also like the idea of adding the smoked sausage. Thanks for the post.
