Any type of chilli can be substituted for the jalapenos in this recipe. Also, the stuffing can be prepared a day in advance and refrigerated.

Just wanted to let you know that I tried out the dish a few hours ago. It was simply divine. I LOVED it, and he will love it when he comes home. It was so good. I still smell like onion and garlic though. lol But it's well worth it. The smell of the filling simmering on the stove top gave the house such a wonderful smell. I used mesquite coals, and that gave it a nice flavor too. I also put a bit of olive oil on the steaks before I put them on the grill. They were perfect. Thank you so much for this recipe. :D

I used thick rib eye steaks and the pepper of choice was Bhut Jolokia. Blew the back of my head off. I didn't have the cheese but these were so good I didn't miss it. GREAT! Drank lots of Guinness.
