Chocolate Macadamia Decadence

- 3 oz bittersweet chocolate, chopped shopping list
- 1 oz unsweetened chocolate, chopped shopping list
- ¾ cup macadamia nuts, toasted shopping list
- 1/3 cup almond meal shopping list
- 1/3 cup unsalted butter, room temp shopping list
- 2/3 cup sugar shopping list
- 1 egg shopping list
- ½ cup raspberry or strawberry yogurt shopping list
- 2 Tb raspberry or strawberry jam shopping list
- ½ tbsp vanilla shopping list
How to make it
- Preheat oven to 350°F, grease a 9” round pan.
- Stir chopped chocolates in top of double boiler over simmering water until melted and smooth. Cool slightly.
- Process macadamia nuts and almond meal in processor or blender until nuts are finely ground.
- Transfer nut mixture to small bowl.
- Add butter and sugar to processor (no need to clean) and blend using on/off turns until mixture is smooth.
- Add egg, yogurt, jam and vanilla, process until smooth.
- Add melted chocolate and process, add nuts and mix until just combined.
- Bake 40 minutes, or until tests done.
- Cool cake in pan on rack 30 minutes. Invert cake onto rack and cool completely.
