Ingredients

How to make it

  • In a large pot add 1 liter of water and bring to boil, while waiting continue...
  • Peel and cut potatoes into small cubes (about 1cm wide)
  • Add these to the water along with stock cubes
  • Leave to boil on medium heat for 30minutes, while waiting continue...
  • Clean and chop onions finely and cut leeks into thin rounds
  • Fry these in a pan with a little oil till onions are translucent
  • Lower the heat and add the chopped garlic and cut red chili pepper
  • Fry for another 2 minutes, do not brown the garlic
  • Once done add the onion mixture to the boiling potatoes
  • Add the spinach to the potato soup and leave to cook till potatoes are soft and spinach is cooked.
  • Remove from heat and add yogurt
  • Blend the soup and adjust salt and pepper to taste.
  • Serve right away
  • Note: I added finely chopped green onion (chives) after blending, garnished with parsley leaves and topped with Parmesan cheese

    This looks very unique and delicious. My husband and I love to have soup and salad for dinner in the cold Canadian winters. This is going to be the next one I make. :)

    We ate this with dinner last night. I have to be honest, I was worried about my Honey eating it, he does not eat spinach at all, so I put about a teaspoon full on his plate. He actually asked for more! PS, I did not have plain yogurt, and being the Frugal Pantry Cooker that I am, I substituted Cherry Yogurt. It tasted fantastic...to all our suprise!

    The yogurt is optional, it simply makes the soup creamier. ^_^

    This DOES sound good, and simple! We eat a lot of spinach, as salads, cooked in quiches...etc. I look forward to trying this soup. Thanks for the post, Nemo.

    I don't eat cooked spinach at all. Will try this though, because hubby loves it. Keep you posted if you won me over to the spinach side. Looks tasty anyhow!
