Ingredients

How to make it

  • In a 5 quart saucepan, heat oil and cook onion, green pepper and garlic until tender.
  • Add meat; cook until done, about 5 minutes.
  • Stir in seasonings, tomatoes and tomato paste.
  • Heat to boiling, reduce heat and simmer 2 hours.
  • Before serving, add water and return chili to boiling.
  • Stir in uncooked Lone Star Pasta; continue boiling, stirring frequently, 10 to 15 minutes or until pasta is tender.
  • Makes 6 servings.

    I would not recommend garter snake. They have nasty, self-defense secretions that i can't imagine tast good. Gophper snake makes a good substitute or addition, however.

    I have eaten and cooked rattlesnake and it is quite good.

    Linda...my friend.....sorry....but there is no way on this green earth that I will try to eat rattlesnake. If it isn't pork, beef or chicken, this girl ain't gonna eat it. hahahahahahahahahaaa

    OMG! Rattle snake!!!
    Gosh ! I thought we cajuns eat different..Although I have heard of people eating this....I'm just scared ! Guess the knowing it is a snake...lol

    Freer was about 30-40 minutes away from Laredo (where I grew up.) Rattlesnake meat is interesting. It's pretty good. I've only had it as tacos. But I would imagine that in a Chili recipe it would be right at home.

    And a really big pit and lots of snakes and lots of noise. And lots of idiots playing with them in the pit and poking them. God what a creepy feeling but deep fried and all sorts of other ways being made, YUMMY!. Does not taste like chicken and it is good! We do have the eastern massasauga here (rattlesnake) different from the eastern timnber rattler (which is endangered in NY but probably tastes as good) and if someone wants to volunteer to catch a couple I will make them...after they have no heads that is.

    Sounds like it might have a rattlesnake "bite" to it! lol...love the Lone Star pasta - you see it everywhere down there! Great post - gave me a chuckle, thanks!
