Fish Chowder

- 4 bacon slices, chopped shopping list
- 4 Tbsp olive oil OR butter shopping list
- 1 carrot, shredded shopping list
- 1 leek, sliced shopping list
- 1/2 onion, diced shopping list
- 4 cups fish stock shopping list
- 2 cans corn shopping list
- 2 medium potatoes, diced shopping list
- 4 threads saffron (can be omitted) shopping list
- 2 cups milk (whole or skimmed) shopping list
- 2 cups fish already cooked and boned, flaked shopping list
How to make it
- In a big casserole cook bacon and oil until crisp. Add carrot, leek and onion. Cook until translucent, then add fish stock, corn and potatoes.
- Take to a boil and let cook on medium heat 10 minutes or until potatoes are done. Salt and pepper to taste.
- Add saffron, milk and fish to casserole and let cook 5 more minutes until hot.
- Serve immediately.
