A delightful cream sauce. It's a tangy cream sauce that uses a bit of cheese for a distinctive flavor. You'll typically use Mornay on seafood, but also is great over eggs, veggies, chicken or crepes. Enjoy! :)

Ingredients
  • 4 Tbsp. butter
  • 5 Tbsp. flour
  • 2 cups boiling milk
  • ¾ cup vermouth
  • ½ tsp. salt
  • ¼ tsp. white pepper
  • 1/8 tsp. nutmeg
  • ¼ cup heavy cream
  • 1 cup grated Swiss cheese (divided)

Directions
  1. Melt butter and stir in flour; cook 1 minute without browning.
  2. Stir in the boiling milk, vermouth and seasonings.
  3. Boil 1 minute.
  4. Reduce to a simmer and stir in the cream, a little at a time.
  5. Remove the sauce from the heat.
  6. Stir in ¾ cup of the cheese.
  7. Serve, Makes 3 Cups.
