How to make it

  • Nuts: Melt butter in small skillet over medium heat. Stir in sugar and cayenne pepper; mix well. Stir in nuts to coat. Cook and stir 4-5 minutes or until nuts are lightly toasted. Remove from heat and cool.
  • Dressing: In small container with cover, mix all dressing ingredients shake very well. Refrigerate until ready to use.
  • Preheat grill. Sprinkle chicken with cajun seasoning. Grill chicken on medium heat until done, about 10-12 minutes. When done, cut into strips.
  • Toss warm chicken, onion, red pepper and tomato with salad greens. Sprinkle with spiced nuts. Serve with dressing.

    Thanks everyone. We just had this for dinner last night again and it was just wonderful. Easy for weeknight dinners, but with a little sass!

    I made this for lunch today, and it is positively delicious! Making the nuts just for one lunch was a bit time consuming (although would be right on par for a dinner), so I think next time I will make enough for multiple salads. Also, I used the mini-processor attachment to my stick blender to make the dressing, ensuring it would not separate.

    ETA: Hope you don't mind, but I added your recipe to a new group I started.
