Cajun Chicken Salad

- 1 Tbsp butter shopping list
- 1 tsp sugar shopping list
- 1/8 tsp ground red cayenne pepper shopping list
- 1/2 C pecan or walnut halves shopping list
- DRESSING shopping list
- 1/2 C oil shopping list
- 1 Tsp coarse ground mustard shopping list
- 1 Tbsp cider vinegar shopping list
- 1 Tbsp balsamic vinegar shopping list
- 2 Tbsp honey shopping list
- 1/8 tsp ground red cayenne pepper or to taste shopping list
- SALAD shopping list
- 1/2 lb (Approx 2) boneless skinless chicken breasts shopping list
- 1 Tbsp cajun seasoning shopping list
- 1 tsp garlic shopping list
- 5 C mixed salad greens (I like a spring mix or spinach and red leaf lettuce) shopping list
- 1/2 red bell pepper cut into thin strips shopping list
- 1/2 red onion cut into thin strips shopping list
- 1 large tomato, cut into chunks shopping list
How to make it
- Nuts: Melt butter in small skillet over medium heat. Stir in sugar and cayenne pepper; mix well. Stir in nuts to coat. Cook and stir 4-5 minutes or until nuts are lightly toasted. Remove from heat and cool.
- Dressing: In small container with cover, mix all dressing ingredients shake very well. Refrigerate until ready to use.
- Preheat grill. Sprinkle chicken with cajun seasoning. Grill chicken on medium heat until done, about 10-12 minutes. When done, cut into strips.
- Toss warm chicken, onion, red pepper and tomato with salad greens. Sprinkle with spiced nuts. Serve with dressing.
