Champignons Farcis Stuffed Mushrooms Recipe
A nice change from the usual seafood stuffing. These mushrooms disappear quickly so I always double the recipe. Enjoy! This recipe is a from the First Edition set of Woman's Day Encyclopedia of Cookery that was published in 1966.

Ingredients
  • 12 Large mushrooms
  • 6 slices bacon
  • 1 small onion, finely chopped
  • 1/4 chopped green pepper
  • 1 cup soft bread crumbs
  • 1/2 tsp season salt
  • 2 Tbl parsley
  • Chicken broth to moisten

Directions
  1. Cook bacon until crisp and set aside; crumble when cooled
  2. Pour off all but about 2 Tbl of drippings and saute onion and pepper until tender
  3. Stir in bread crumbs, crumbled bacon, parsley and season salt; add broth to moisten
  4. Stuff mushroom caps, place in shallow pan with a small amount of water ( ΒΌ inch deep)
  5. Bake at 325 for about 25 mins.

I am so tired of seafood stuffed mushrooms. It's nice to see an alternative as good as yours. I'll have to save this recipe and serve them with a holiday meal.
