Chocolate Fruitcake

- Chopped candied pineapple - 1 cup shopping list
- raisins - 1 cup shopping list
- red candied cherries, halved - 1 cup shopping list
- coffee flavored liqueur - 1/2 cup shopping list
- butter or margarine - 3/4 cup shopping list
- sugar - 1 cup shopping list
- egg yolks - 6 shopping list
- unsweetened chocolate,melted and cooled - (4) 1 oz. squares shopping list
- all purpose flour - 2 cups shopping list
- baking powder - 1 tsp shopping list
- coarsely chopped walnuts - 3 cups shopping list
- egg whites - 6 shopping list
- sugar - 1/2 cup shopping list
How to make it
- Combine pineapple, raisins, cherries and the half cup of liqueur.
- Cover and let stand several hours or overnight at room temperature.
- Drain fruit, reserving liqueur.
- Measure liqueur and if necessary add enough to make 1/3 cup.
- Set fruit and liqueur mixture aside.
- Line bottoms of 2 greased 9x 5 x 3 loaf pans with brown paper.
- Grease top of paper.
- Cream butter or margarine and the 1 cup of sugar.
- Beat in egg yolks one at a time, beating well after each addition.
- Beat in cooled chocolate.
- Stir together flour and baking powder.
- Add to creamed mixture alternately with reserved liqueur mixture, mixing well.
- Stir in fruits and nuts.
- Wash beaters thoroughly.
- Beat egg whites to soft peaks.
- Gradually add the half cup sugar, beating to stiff peaks.
- Fold about one fourth of the egg whites into batter.
- Then fold in remaining whites.
- Turn into prepared pans.
- Bake at 300 degrees F for 1 hour 10 minutes to 1 hour 15 minutes.
- Cool in pans 10 minutes, remove to wire rack.
- Spoon 1/4 cup coffee flavored liqueur or creme de cacao over each loaf.
- (Use about 2 tablespoons for small loaves)
- Cool thoroughly.
- Wrap loaves individually in liqueur-soaked cheesecloth.
- Overwrap in foil and store in a cool place for at least one week.
- Sprinkle with additional liqueur once.
- Makes 2 large loaves

I truly enjoy good fruit cake. I have never tried it with chocolate but I will now. Yummy for the tummy!

It tastes soo good! But, I nearly burn my cake luckily I rescued it on time! I have mistaken the 300F for 300C :)
