No Frost Pumpkin Cupcakes Recipe
Frosting baked in,travels to schools,picnics,get-togethers.Moist and flavorful.Makes alot of cupcakes.I like to double topping recipe.

Ingredients
  • 3 cups flour
  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups,pureed pumpkin
  • 2 tsp.baking soda
  • 1 tsp.cinnamon
  • 1 tsp.nutmeg
  • 1 tsp.ground cloves
  • 1/2 tsp.baking powder
  • 1 cup chopped pecans
  • 2/3 cup water
  • 1 tsp.salt.
  • 8 OZ creamcheese,softened
  • 1/3 cup sugar
  • 1 egg
  • 6 OZ semi-sweet chocolate chips,regular or mini size

Directions
  1. Preheat oven to 350 degrees.
  2. In large bowl beat eggs,add oil,then pumpkin.Mix dry ingredients in medium bowl.Gradually beat into egg/pumpkin mixture.
  3. Line cupcake pan with paper liners.Fill half full with batter.
  4. In a medium bowl beat cream cheese,egg and sugar together.Drop spoonful,about one tablespoon,onto cupcake batter.Sprinkle with chocolate chips.Bake at 350 for 25-30 minutes.
