This how we make pancakes in S.A.

The ingredients
Whisk egg whites
Mix dry and wet
Fold in egg whites
Dough must be runny
Heat little oil in p
Bake only thin layer
Turn around until bo
Put cinnamon mixture
Roll up

Ingredients
- 500 ml cake flour (2 cups)
- 10 ml baking soda (2 teaspoons)
- 2 ml salt (3/4 teaspoon)
- 2 eggs, seperated
- 125 ml oil (1/2 cup)
- 400 ml water ( 1 1/2 cup)
- 250 ml milk (1 cup)
- 15 ml lemon juice or brandy (1 tablespoon + 1/2 teaspoon)
- cinnamon and sugar mixture
Directions
- Sift dry ingredients.
- Whisk egg yolks, oil, water, milk and juice together.
- Whisk egg whites till stiff.
- Mix the egg mixture into the dry ingredients to prevents lumps.
- Beat with electric mixer.
- Fold in the egg whites.
- Pour very thinly into a greased pan.
- Bake until golden brown on one side.
- Turn over until golden brown.
- Put sugar and cinnamon on top and roll up.
- Serve hot.
