I remember Mom finding this when I was younger than 5 (not in school), don't know where she got it. Has been a Christmas tradition ever since! STILL a treat! She submitted the recipe, when I was little, to Mary Starr - local cooking celebrity that actually had her own local cooking show late 60's early 70's, and it appeared in Mary Starr's cookbook with 3 stars! Ingredients
- COOKIES: shopping list
- 1.5 c all-pupose flour shopping list
- 1/2 t. baking soda shopping list
- 1/2 t salt shopping list
- 2/3 c brown sugar shopping list
- 1/2 c shortening shopping list
- 1 egg, unbeaten shopping list
- 1/4 c marachino cherry juice shopping list
- 2 T milk shopping list
- 2 sq unsweetened chocolate, melted shopping list
- 1/4 c chopped marachino cherries shopping list
- 18 jumbo marshmallows - cut in half shopping list
- cup hot water (to dip knife in) shopping list
- ICING: (Doubles as Mom's fudge recipe) shopping list
- 2 c sugar shopping list
- 1/4 c cocoa shopping list
- 1 small can evap. milk (2/3 c) shopping list
- 1 stick margarine shopping list
- 10 jumbo marshmallows shopping list
How to make it
- COOKIES:
- Mix and set aside: flour, soda & salt
- Cream brown sugar and shortening well
- Blend in unbeaten egg
- Beat well.
- Stir in half the dry ingredients
- Add marachino chrry juice & milk
- Stir in remaing dry ingredients
- Mix well
- Blend in melted chocolate
- Fold in cherries
- Drop by rounded teaspoon onto ungreased cookie sheet
- Bake at 350 for 6-7 minutes
- While cookies are baking, cut marshmallows in half, dipping knife in hot water to prevent sticking)
- Immediately after taking cookies from onve, press one marshmallow half, cut side down, on each cookie
- Frost with chocolate icing.
- ICING:
- Bring first 5 ingredients to a boil.
- Cook 6 minutes on medium heat
- Remove
- Add 10 marshmallows
- Beat to spreading consistency, and spoon over marshmallows (Beat by hand, in the pan - not transferred to mixer - that doesn't work!).
