How to make it

  • On medium heat, cook onion and garlic until the onions are translucent.
  • Add desired meat and cook until brown.
  • Add tomato puree and tomato paste.
  • Add remainder of ingredients and simmer for at least 1 hour.

    Made this a second time using mild Italian sausage and diced up chicken.

    Added sage and Italian seasoning to try to convert a chopped up meatloaf to taste like sausage.

    Pretty good recipe for a short simmer sauce. Had to add a lot of salt to get it to that savory flavor.

    This is a reasonable recipe except for the cooking time. It's been my experience that pasta sauce that simmers for 5-6 hours is far superior to those reccommending a shorter time. The long time over low heat really causes flavors to blend. It is even better when heated up in the next day or two. I typically simmer the sauce for about 4 hours before adding the meat. My preference is a cut up pot roast for initial use. I then sometimes add chicken for a subsequent use.
