Ingredients

How to make it

  • Scrub and dice potatoes into bowl of cold water, skin on
  • Drain, and transfer to microwavable dish, with lid (preferrably vented lid)
  • Add onion, peppers, garlic, seasoned salt and pepper
  • Stir together
  • Top with butter pads
  • Lightly drizzle EVOO across top
  • Lightly sprinkle parmesan cheese over top
  • Cover with lid and pop open vent, OR partially cover with lid
  • Microwave approximately 12 minutes. Rotating halfway through if no turntable
  • Check for doneness, cook longer if needed
  • Careful - steam beneath lid will burn you - learned that the hard way!
  • Do not know the wattage, but, I have a high powered microwave. May take 15-16 miknutes for lower wattage.

    Always appreciate a healthier alternative to "frying" and any new recipe for the microwave is appreciated. I like recipes that don't heat up the kitchen during the long summers here in Florida.

    Girl, in my oldie cheapie microwave, this might take 20 minutes, ahahahahaaa! Still worth a try and sounds so fantastic. Easy to do while the other stuff is being tended to on the stovetop!
