Not Really Fried Potatoes

- 6-8 medium size potatoes, scrubbed, skin on, large -but thin -diced (thick pieces take longer to cook). shopping list
- 1 small white onion, diced shopping list
- 2 T chopped garlic shopping list
- 1 red or greem pepper, diced (optional) shopping list
- 2 pads butter or margarine shopping list
- seasoned Salt shopping list
- garlic pepper shopping list
- parmesan cheese - sprinkle shopping list
- EVOO shopping list
How to make it
- Scrub and dice potatoes into bowl of cold water, skin on
- Drain, and transfer to microwavable dish, with lid (preferrably vented lid)
- Add onion, peppers, garlic, seasoned salt and pepper
- Stir together
- Top with butter pads
- Lightly drizzle EVOO across top
- Lightly sprinkle parmesan cheese over top
- Cover with lid and pop open vent, OR partially cover with lid
- Microwave approximately 12 minutes. Rotating halfway through if no turntable
- Check for doneness, cook longer if needed
- Careful - steam beneath lid will burn you - learned that the hard way!
- Do not know the wattage, but, I have a high powered microwave. May take 15-16 miknutes for lower wattage.

Always appreciate a healthier alternative to "frying" and any new recipe for the microwave is appreciated. I like recipes that don't heat up the kitchen during the long summers here in Florida.
