Whole Wheat Cake Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the McNabb Estate in Malakoff, Texas in 1997.

Ingredients
  • 1-1/4 cup all purpose flour sifted
  • 2-1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup whole wheat flour
  • 1/2 cup shortening
  • 3/4 cup granulated sugar
  • 2 eggs beaten
  • 1/2 teaspoon vanilla
  • 1 cup milk

Directions
  1. Preheat oven to 325.
  2. Sift white flour then measure and resift 3 times with baking powder and salt.
  3. Add in whole wheat flour then stir it in thoroughly.
  4. Cream shortening with the sugar.
  5. Add beaten eggs and beat mixture until smooth then stir in vanilla.
  6. Add flour mixture alternately with milk into creamed mixture.
  7. Line two baking pans with wax paper then lightly grease and flour.
  8. Pour batter into pans and cook for 25 minutes then cool in pans for 5 minutes.
  9. Turn out to cool completely on cake rack.

Awesome. i'm always looking for ways to incorporate whole granins into baking. i'm also on the lookout for ways to get more milk into my fussy 15-month-old!


I am not a fan of whole wheat baking mine always comes out too heavy.????
