Ingredients
  • 2 cups packed brown sugar
  • 2 cups flour
  • 1 cup chopped pecans
  • 2 eggs
  • 2 sticks of melted butter (not margarine)

Directions
  1. Spray muffin tins all over the baking surface (you are making huge muffins) and place liners in the cups
  2. Mix all ingredients in bowl until just moistened, lumps are OK
  3. Fill muffin tins heaping full
  4. Bake at 350 degrees for 20-30 minutes
  5. Serve hot
  6. Hint: if you want to double the recipe so you can make them a few at a time, the batter holds very well refrigerated, covered for two to three days.
