Boeuf Beef Championon Pan Sauce Recipe
This is a very easy, but very elegant recipe. It is true French in all aspects. Creme, butter, and wine.

Ingredients
  • Flour for dredging
  • 4- 6 oz Tenderloin steaks
  • 4 oz clarified butter
  • 2 cups fresh mushrooms, sliced (crimini, white button and /or shitake
  • Maderia wine
  • Heavy cream

Directions
  1. Dredge steaks in flour. Heat clarified butter on med- high in skillet till hot. Saute steaks in butter, turn when brown. Cook until Medium rare about 3 minutes per side. Remove steaks to platter, tent with foil. Add mushrooms. Saute briefly. Deglaze pan with Maderia wine. Add Heavy cream, about 1 cup. Reduce. Season with salt and pepper to taste. Plate tenderloins and pour sauce over the steak.
