My daddy raised me and had always been in the kitchen when Mamma cooked so he was able to tell me a lot of her recipes. Also one of my sisters is 20 years older than me so she knows a lot of them and tells me also. Yak at ya later my friend,

Gem there are 2 and I am sure more ....kinds of irish potato candy.....1 is made with out potatoes at all...just called that don't really know why....here is one with potatoes
    Irish Potato Candy

1/2 cup mashed potatoes, made without butter, salt, or milk
    1 teaspoon vanilla
    2 pounds confectioner's sugar
    ground cinnamon

Add vanilla to the potatoes. Next, add the sugar. Mix enough sugar to the potatoes until it becomes thick to shape. Take a small ball and form it into the shape of a tiny potato. Roll this into the cinnamon. Store in an air tight container.
