Ingredients
  • 2 lg. portabello mushrooms
  • 1 avocado
  • 1 tomato,seeded and peel
  • 1 serrano pepper,seeded and chopped
  • 2 T. bread crumbs
  • 3 garlic cloves,minced
  • 1 T. lemon juice
  • 1 t. onion salt
  • 1/4 t. salt
  • 3/4 c. mozzarella cheese,shreaded
  • 1 T chopped frsh cilantro,for garnish

Directions
  1. Carefully remove stems from mushrooms being careful not to split the caps.
  2. Chop the stems and place in bowl
  3. Add,avocado,tomato.serrano pepper.breadcrumbs,garlic,lemon juice,onion salt and salt.
  4. Mix till well combined
  5. Fill mushrooms with mixture ,packing firmly
  6. Bake in pre-heated oven@ 350 for 7 mins.
  7. Remove from oven and sprinkle each with cheese
  8. Return to oven and bake for about 5 mins or until cheeses is melted.
  9. Garnish with cilantro and serve.
  10. Note: Can use lime juice instead of lemon.,pepper jack instead of mozzarella.
