Ingredients

4-5 yellow (or summer) squash/zucchini

1 med. sweet onion

2 eggs

olive oil (or butter)

salt

pepper

Directions

Saute onions in olive oil

cut-up and steam squash/zucchini

beat eggs in a bowl

combine all the above ingredients in a casserole dish, and bake for

35-45 minutes at 350 degrees (or until eggs are cooked throughout and

very slightly brown on sides)

salt/pepper to taste
