Ingredients
  • 1 large egg + 1 yolk
  • 1 clove of garlic
  • 1 Tsp vinegar (just NOT white)
  • Juice of 1/2 lemon
  • pepper
  • 1/2 Tsp. Dijon mustard
  • 1/4 tsp. sugar
  • 1 cup extra Virgin Olive Oil

Directions
  1. Mix all but the olive oil in a food processor.
  2. Through the feed tube slowly pour the oil in a steady stream so that it becomes emulsified into the mixutre.
  3. STOP running the machine as soon as the oil is poured in and it is emulsified -DO NOT OVER PROCESS this mixture.

I would like to try this. How long can this be kept in the refrigerator? JJ Of course I would have to take pics of the process and final product. But then I take pics of all my recipes if possible.


This is fresh and has no stabilizers nor preservatives. I'd use it within a couple of days, maximum. We've just never had it last longer to reference.


Homemade mayonnaise is wonderful. Love it! Thanks...
