fried buffalo oysters

- 2 pints fresh SELECT oysters-drained( select are large shucked oysters) shopping list
- 2 cups buttermilk shopping list
- 1 cup all purpose flour shopping list
- 1/2 cup yellow cornmeal shopping list
- 1 Tbs. paprika shopping list
- 1 1/2 tsp. garlic power shopping list
- 1 1/2 tsp. dry oregano shopping list
- 1 1/2 tsp. ground red pepper 1/2 tsp. mustard powder shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- vegetable oil shopping list
- 1/2 cup butter-melted shopping list
- 1/2 cup louisianna hot sauce shopping list
- ranch dressing shopping list
- celery sticks shopping list
- 2 Tbs. fresh lemon juice shopping list
How to make it
- combine oysters and buttermiln in a sealable plastic bag,mix well and chill for 2 or more hours
- drain oysters well
- combine flour and the next 8 ingredients
- dredge oysters in mixture,shacking off excess flour
- pour a depth of 2" of oil in a dutch oven and heat to 370F.
- fry oysters in batches to keep the tempature up,for 3 minutes or until golden.
- drain on paper towels.
- stir melted butter,hot sauce and lemon juice. pour mixture over oysters,evenly and serve with celery sticks and ranch dressing on the side
