Ingredients
  • 2 pints fresh SELECT oysters-drained( select are large shucked oysters)
  • 2 cups buttermilk
  • 1 cup all purpose flour
  • 1/2 cup yellow cornmeal
  • 1 Tbs. paprika
  • 1 1/2 tsp. garlic power
  • 1 1/2 tsp. dry oregano
  • 1 1/2 tsp. ground red pepper 1/2 tsp. mustard powder
  • 1/2 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • vegetable oil
  • 1/2 cup butter-melted
  • 1/2 cup louisianna hot sauce
  • ranch dressing
  • celery sticks
  • 2 Tbs. fresh lemon juice

Directions
  1. combine oysters and buttermiln in a sealable plastic bag,mix well and chill for 2 or more hours
  2. drain oysters well
  3. combine flour and the next 8 ingredients
  4. dredge oysters in mixture,shacking off excess flour
  5. pour a depth of 2" of oil in a dutch oven and heat to 370F.
  6. fry oysters in batches to keep the tempature up,for 3 minutes or until golden.
  7. drain on paper towels.
  8. stir melted butter,hot sauce and lemon juice. pour mixture over oysters,evenly and serve with celery sticks and ranch dressing on the side
