Ingredients

3 Tbs.lemon zest

1/2 cup fresh lemon juice (2 to 4 lemonds)

1 1/2 cup sugar

8 TBS. butter

3 eggs, lightly beaten

2 yokes,lightly beaten

Directions

In a medium sauce pan,over medium-high heat,combine lemon zest,lemon juice and sugar,bring to a boil;reduce heat to medium-low and simmer for 5 minutes

add butter and stir till melted and combined

remove from heat and let cool to room temperture

beat eggs into mixture until well blended

return to heat and cook over medium hear,stirring constantly,10 to 15 minutes or until mixture thickens to coat a spoon

remove from heat and cover and refrigerate for at least 1 hour
