Lemon Curd

- 3 Tbs.lemon zest shopping list
- 1/2 cup fresh lemon juice (2 to 4 lemonds) shopping list
- 1 1/2 cup sugar shopping list
- 8 TBS. butter shopping list
- 3 eggs, lightly beaten shopping list
- 2 yokes,lightly beaten shopping list
How to make it
- In a medium sauce pan,over medium-high heat,combine lemon zest,lemon juice and sugar,bring to a boil;reduce heat to medium-low and simmer for 5 minutes
- add butter and stir till melted and combined
- remove from heat and let cool to room temperture
- beat eggs into mixture until well blended
- return to heat and cook over medium hear,stirring constantly,10 to 15 minutes or until mixture thickens to coat a spoon
- remove from heat and cover and refrigerate for at least 1 hour

Sounds just like a recipe I have and love - great post but I think a quick edit will make the augar - sugar ;) LOL have to love the world of computers
