Baked Sweet Potatoes With Bacon And Blue Cheese Recipe

Ingredients

4 medium sweet potatoes, peeled & diced

1/2 cup unsalted butter, melted

6 slices bacon, cooked and crumbled

1 cup blue cheese, crumbled

salt & pepper to taste

Directions

Preheat oven to 350.

Over medium-high heat, boil the potatoes in enough water to cover until tender.

Drain and return to the pot, add the butter and mash; season to taste.

Turn the potatoes out into a large baking dish, top with blue cheese and the bacon.

Place in the oven until the cheese is bubbly and the potatoes are heated through.
