Baked Sweet Potatoes With Bacon And Blue Cheese

This is an interesting way to serve sweet potatoes. The blue cheese and bacon work really well with the sweet potato flavor.
Ingredients
- 4 medium sweet potatoes, peeled & diced shopping list
- 1/2 cup unsalted butter, melted shopping list
- 6 slices bacon, cooked and crumbled shopping list
- 1 cup blue cheese, crumbled shopping list
- salt & pepper to taste shopping list
How to make it
- Preheat oven to 350.
- Over medium-high heat, boil the potatoes in enough water to cover until tender.
- Drain and return to the pot, add the butter and mash; season to taste.
- Turn the potatoes out into a large baking dish, top with blue cheese and the bacon.
- Place in the oven until the cheese is bubbly and the potatoes are heated through.
