Delicious slow-cooked beef roast, use any cut of beef- sure to be delicious! Dinner in one pot is always appreciated, and ready when I get home is even better. I love this recipe; you will too! Recipe adapted slightly from Lipton.

Ingredients
  • 2-3 lb beef roast of your choice
  • Olive oil
  • 1 lb carrots, baby or regular
  • 4 red, or I like yukon gold potatoes
  • 1 small yellow onion, quartered
  • 5 cloves garlic, crushed
  • 1 package Lipton onion soup mix
  • 2 tsp beef base
  • 3 cups hot water

Directions
  1. Brown roast in a pan with a little bit of oil over medium-high heat, until all sides "sealed" and brown
  2. Layer half of the carrots, garlic and all of the onion on the bottom of crock pot
  3. Top with browned roast
  4. Arrange the rest of the carrots, garlic and potatoes on top of roast
  5. Mix beef base and soup mix in the hot water, pour over roast and veggies
  6. Cover crock pot tightly, set on high
  7. Cook for six to eight hours, meat will be very tender, falling apart and veggies cooked through
  8. Enjoy!
  9. *Depending on your how quickly your crock pot cooks things, you may want to adjust cooking time and/or heat. This how long my sloooow cooker takes : )

Love this. Can't beat that Lipton Soup Mix over a roast in a crockpot! I am interested in the beef base that you use. Beef bouillon?


What brand of beef base do you use? Just curious.

I made this dish last night and it was wonderful!! I found beef base, but cheaped out and got beef boullion instead, it was alot cheaper. I used 4 cubes, so hopefully it didn't change the taste of your recipe much!! Thanks for the yummy post!! It's a keeper!!

What can I use instead of Lipton Soup Mix?


Sounds great. We do similar roasts often (usually chuck), in the oven. I'll have to try the Lipton's. Thanks.
