Clam Spaghetti Regular And Gluten Free Recipe
This clam sauce is something I sort of made up I think.. I have no recipe for it. I have been making for over 35 years. It's great with Italian bread.

Ingredients
  • 2 large yellow onions chopped
  • 1/4 - 1/3 cup extra virgin olive oil --I use Filippo Berio**
  • oregano approx 1 TBSP or more
  • 2 cloves garlic either finely minced or use the garlic press
  • vermouth extra dry approx 1/2 cup +
  • 3 cans minced clams
  • handful of dried parsley
  • cayenne pepper optional
  • 2 TBSP butter
  • ** I used another brand and the sauce came out very flat tasting.

Directions
  1. Put the onions and the olive oil in a frying pan. cook onions until soft but not browned.
  2. add oregano and stir for approx 30 seconds. add the garlic . do not let it brown
  3. add vermouth heat thru and reduce by 1/2 .. you may want to add more
  4. add 3 cans of clams, juice and all
  5. let heat thru add parsley and the red pepper
  6. reduce the heat to med low you want to reduce the liquid by 1/2
  7. just before you drain the spaghetti add butter to the clam sauce
  8. this will help thicken it up a little more
  9. pour over spaghetti and I serve it with lots of grated Asiago cheese

Sounds awesome!!! I would LOVE it but the hubby would want some SERIOUS meat to chew on...I know...there are clams in it. (insert rolling eyes smiley here...lol)
