Ingredients

How to make it

  • Heat oven to 350 F.
  • Grease 11x7-inch baking pan
  • Combine oats, flour, brown sugar, nuts, baking soda and salt
  • Add butter, mixing until crumbly.
  • Reserve 3/4 cup mixture; press remaining mixture onto bottom of prepared dish.
  • Bake 10 minutes.
  • Meanwhile, combine blueberries, granulated sugar and 2 tablespoons water in medium saucepan.
  • Bring to a boil, simmer 2 minutes, uncovered, stirring occasionally. Combine remaining 1 tablespoon water, cornstarch, and lemon juice; mix well. Gradually stir into blueberry mixture; cook and stir about 30 seconds or until thickened.
  • Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mixture. Press topping down into blueberries slightly.
  • Bake 18 to 20 minutes or until topping is golden brown.
  • Cool on wire rack; cut into bars. Store tightly covered.

    Are frozen blueberries required or can fresh be used instead; will it not turn out the same?

    I made these bars for a group of parents and toddlers and they DEVOURED them- some having 2nds and 3rds even! The recipe was very simple and I tweaked it a bit using whole wheat flour and subbing some honey instead of sugar in the blueberry filling. I did notice a hint of saltiness in some of the bites- not enough that it ruined it at all, but it definitely gave the bars an interesting salty/sweet combo. Next time I make these I think I'll halve the salt and see how they taste.

    otherwise, if i used like 1/8 teaspoon of salt, i think they would've tasted delicious. all gone to waste...

    p.s. use a smaller pan

    ALSO I USED HALF BLACKBERRIES HALF BLUEBERRIES IT TURNED OUT GREAT THE BLACKBERRIES GAVE A GREAT TART FLAVOR WHILE THE BLUEBERRIES MADE IT SWEAT AND JUICY!!!!!!!!!!!!!!!!

    this recipe is amazing they were very good however i don't think they are like Starbucks because they are much fresher of course Starbucks bars have lots of preservatives and since these don't they taste different.

    I am soooo glad to have found and fell in love with this recipe. Starbucks have not had blueberry bars for over a month! They say it's because blueberries are not in season...very suspicious...they have blueberry muffins! (I think they are fibbing!) HA!

    A preserve might work. It might be a bit messier, but you could cook it with a bit of cornstarch/water mix, to thicken it more. You can't get even frozen berries? Ohhhh I love berries!

    Out of this world...would you know if we can subs blueberries with something else. Do u think a preserve would work? U see, we don't get berries in our part of the world! Great post!!
