This cake is a quick easy way to use up those bananas that are about to turn!

Ingredients
  • 1 1/2 cup sugar (I used dark brown)
  • 3-4 mashed bananas
  • 1/2 cup oil (I used peanut)
  • 2 eggs
  • 1/4 cup buttermilk (I used 2%, but you could use soy)
  • 1 tsp vanilla
  • 2 cups flour (I used 1 cup white & 1 cup wheat)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Cream Cheese Frosting
  • Optional: Toasted coconut, sliced bananas, chopped walnuts

Directions
  1. Cobine first 6 wet ingredients.
  2. Sift together the dry ingredients.
  3. Slowly add the dry ingredientd to the wet. Be sure not to overmix,
  4. Bake until a toothpick comes out clean.
  5. 25 minutes for 2 round
  6. 35 minutes for a bundt pan
  7. 40-45 minutes for a 9" X 13" pan
  8. Top with Cream Cheese frosting & toasted coconut or sliced bananas or your favorite chopped nuts.

I love Ambers Banana Cake the looks alone sold me.I love the toasted coconut.
