Ambers Banana Cake Recipe

Ingredients

1 1/2 cup sugar (I used dark brown)

3-4 mashed bananas

1/2 cup oil (I used peanut)

2 eggs

1/4 cup buttermilk (I used 2%, but you could use soy)

1 tsp vanilla

2 cups flour (I used 1 cup white & 1 cup wheat)

1 tsp baking soda

1/2 tsp salt

Cream Cheese Frosting

Optional: Toasted coconut, sliced bananas, chopped walnuts

Directions

Cobine first 6 wet ingredients.

Sift together the dry ingredients.

Slowly add the dry ingredientd to the wet. Be sure not to overmix,

Bake until a toothpick comes out clean.

25 minutes for 2 round

35 minutes for a bundt pan

40-45 minutes for a 9" X 13" pan

Top with Cream Cheese frosting & toasted coconut or sliced bananas or your favorite chopped nuts.
