Taffy Apple Muffins Recipe
This puts an extra spin on the muffin. It's good as a snack, for breakfast or for brunch. It's fruity, nutty and very tasty. We love them. Hope you do to.

Ingredients
  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped apple
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 3/4 cup finely chopped walnuts

Directions
  1. Preheat oven to 400.
  2. Prepare miniature muffin pans.
  3. In medium bowl combine flour, sugar, baking powder, salt and nutmeg.
  4. In another bowl combine milk, butter, eggs and vanilla until blended.
  5. Stir dry mix into wet mix until just moistened.
  6. Fold in apple and spoon into pans and bake 12 minutes.
  7. Meanwhile in saucepan heat honey and brown sugar to a boil stirring to dissolve sugar.
  8. Dip warm muffins into hot glaze then into chopped nuts.

I made these for my elderly lunch guests,they absolutely loved them. The only thing that I did was to toast the nuts before chopping. I actually thought I saw roasting in the instructions. Anyway they were great.
