Philippines is known for this dish. A lot of people uses pork but i prefer chicken. Best served with rice.

I almost forgot!! Made this a few nights back, and I made a couple of changes.... I used BOTH skin-on, bone-in chicken breasts and thighs AND pork back ribs. I omitted the potato, used a sweet potato (yam) because I had one to use up :) I used a blend of rice, apple cider, white and balsamic vinegars, but mostly white vinegar. Couldn't find cane vinegar, so I used a splash of mirin (a white Japanese syrup) to help balance the vinegars. VERY good :)

I love chicken adobo! One of my faves to cook too. I am a Filipina but born and raised in Hawaii. Land of many many cultures and foods! Yes, it's an absolute must...you must have rice with the chicken adobo! I agree! Thanks for sharing this. I can almost savour the aroma of the adobo in the air! :)
