This looks really tasty, thank you.

I love Adobo, both pork and chicken! Thank you for posting your recipe, LeslieRose :)

Sounds great, bookmarking to make, I love Adobo also.

I got hooked on adobo when I worked with a number of Philippinos. Yum, yum, yum. And the thing is, everyone had a different recipe, just like Italians with tomato sauce. :-) I'm going to try this one. Thanks!

Love adobo! Will make this.

Where do you get cane vinegar?

This looks really good. I'd heard of chicken adobo but didn't know what it was. I've saved it to try. Thanks.

I love chicken adobo! One of my faves to cook too. I am a Filipina but born and raised in Hawaii. Land of many many cultures and foods! Yes, it's an absolute must...you must have rice with the chicken adobo! I agree! Thanks for sharing this. I can almost savour the aroma of the adobo in the air! :)

Alterations

I almost forgot!! Made this a few nights back, and I made a couple of changes.... I used BOTH skin-on, bone-in chicken breasts and thighs AND pork back ribs. I omitted the potato, used a sweet potato (yam) because I had one to use up :) I used a blend of rice, apple cider, white and balsamic vinegars, but mostly white vinegar. Couldn't find cane vinegar, so I used a splash of mirin (a white Japanese syrup) to help balance the vinegars. VERY good :)
