  • Since this did not come out for one person, I have deleted the recipe. I wouldn't want anyone else to have such a time. Thanks for your interest.
  • I put several recipes from the net on here. You will notice that they all have a lot of butter compared to the flour, gee I wonder if that is why it is shortbread and not bread or cake?

  • 100 grams Sugar
  • 150 grams Spelt Flour
  • 100 grams Butter
  • 1 Tablespoons Grated Lemon Rind

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup icing sugar
  • 2 tablespoons grated fresh lemon rind
  • 3/4 cup butter, softened

  • 1 1/2 sticks of salted butter, at room temperature
  • 1/2 cup confectioners' sugar
  • 1 1/2 cups flour
  • 1 1/2 TB. grated lemon zest
  • 1/2 tsp. lemon extract

  • 250g butter, room temperature
  • 1/2 cup caster sugar
  • 3 tsp lemon juice
  • 1 tsp grated lemon rind
  • 2 cups plain flour, sifted

  • 150g Spelt Flour 6oz
  • 75g butter 3oz
  • milk to mix
  • 100g pine kernels 4oz
  • 100g runny honey 4oz
  • 1 egg

Directions
  1. Cream together the sugar and butter until light and fluffy.
  2. Work in the flour and lemon rind.
  3. Press the dough into a 8 inch round pan
  4. Cut dough into slices and prick the surface with a fork.
  5. Bake in an oven preheated to 350* for 30 minutes.
  6. Remove from oven and slice again before the shortbread is cold.

I love shortbread... Im gonna try this one....


I tried this recipe, followed it to the letter and the result was a rock-hard, greasy disaster! I believe the that the quantity of spelt flour is much too low for the amount of butter called for. If anyone else had luck with this recipe, I'd like to know the trick!

No, you may have it come out rock hard and greasy and then have to make up a fake person to tell me about it.


I imagine the only thing rock hard and greasy is the person leaving nasty comments when they don't know what they are talking about.

Well, "ccer" just joined the group and it seems mighty strange to me that "ccer" decided out of ALL the recipes to prepare, they picked yours OM. Then for some unknown reason, they decided to diss it. I'd say there's something fishy in Denmark. Maybe that "bird in the pic" hasn't been getting his daily dose of "fish" lately LOL Who knows and who needs the negativity. I rather doubt that this person even prepared your recipe. Not to worry, you have your buddies here and we'll stand by you Organicmama :-)
