Gilroy Roasted Garlic Paste

- 3 large heads of garlic shopping list
- 1/2 cup (approx.) olive oil shopping list
- 1/4 cup grainy mustard shopping list
- 2 tbsp. chopped fresh parsley shopping list
- 2 tbsp. chopped fresh rosemary shopping list
- 2 tbsp. coarsely ground black pepper shopping list
- 1 tbsp. coarse kosher salt shopping list
- 1 tbsp. balsamic vinegar shopping list
How to make it
- Preheat oven to 325ºF.
- Separate the cloves of garlic and peel them. Place in an ovenproof dish just large enough to hold them. Add enough olive oil to cover the garlic. Roast garlic for 30 to 45 minutes or until golden brown and tender. Let cool.
- In a food processor place the roasted garlic and 1/2 cup of the roasting oil. Add the mustard, parsley, rosemary, pepper, salt and vinegar. Blend until smooth.
- Store, refrigerated, for up to 2 weeks.

This will make a great spread for a Temphe Ruben Sandwich.
My garlic has started to sprout up in my garden I will save this for the fall.
