Gilroy Roasted Garlic Paste Recipe
Named after the garlic capital of Gilroy, California. It is a paste rub that can be used on chicken, lamb or beef.

Ingredients
  • 3 large heads of garlic
  • 1/2 cup (approx.) olive oil
  • 1/4 cup grainy mustard
  • 2 tbsp. chopped fresh parsley
  • 2 tbsp. chopped fresh rosemary
  • 2 tbsp. coarsely ground black pepper
  • 1 tbsp. coarse kosher salt
  • 1 tbsp. balsamic vinegar

Directions
  1. Preheat oven to 325ºF.
  2. Separate the cloves of garlic and peel them. Place in an ovenproof dish just large enough to hold them. Add enough olive oil to cover the garlic. Roast garlic for 30 to 45 minutes or until golden brown and tender. Let cool.
  3. In a food processor place the roasted garlic and 1/2 cup of the roasting oil. Add the mustard, parsley, rosemary, pepper, salt and vinegar. Blend until smooth.
  4. Store, refrigerated, for up to 2 weeks.

I've been to the Gilroy garlic festival a few times, and as you drive into Gilroy you can smell the garlic! There's some good innovative garlic food at the festival, including free garlic ice cream...must as I love garlic, I just could't bring myself to try it. Now I regret that!


This will make a great spread for a Temphe Ruben Sandwich.
My garlic has started to sprout up in my garden I will save this for the fall.
