How to make it

  • Preheat oven to 350 degrees F. Remove the giblets from the hens and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. In a medium size bowl, combine Extra Virgin Olive Oil, Kosher Salt, Black Pepper and Ground Sage or Poultry Seasoning. Place each hen on a separate sheet of aluminum foil (large enough to cover hen completely). Brush hens with EVOO mixture, inside and out. Wrap foil around the hens, place hens in a baking pan, making sure to leave enough space between each hen to allow for even heat distribution. Bake 20 minutes and remove hens from foil. You can leave the foil in the bottom of your pan for easier cleanup if preferred. Place hens back in pan and brush with EVOO mixture one more time, bake until golden brown. Place hens on a chopping board or plate, let rest to redistribute juices. Serve one hen per person along with side dishes.

    You know - this gives me an idea. My husband talks about Cornish Hens, but I've never had them, much less made them. This looks easy. Thanks for the recipe - I'll try this!
