How to make it

  • Preheat oven to 350*F.
  • Cream butter and sugar in a mixer fitted with a paddle.
  • Sift together the flour, baking soda, salt, cinnamon allspice, nutmeg and cloves.
  • Remove about ¼ cup of flour mixture to a separate medium bowl.
  • Fold the applesauce into the cream butter sugar mixture. These ingredients will not mix completely.
  • Fold in half of the flour mixture to the bowl.
  • Lightly beat together the eggs, vanilla and buttermilk. Mix into the batter.
  • Add the remaining flour and fold in gently.
  • Place the nuts and raisins into the reserved ¼ cup flour mixture, mix to coat.
  • Gently fold the nuts and raisin into the batter.
  • This will make about 24 cupcakes, 1-9x13x2 or 2-8x8x2 cakes
  • Grease and flour pans or use cupcake liners
  • Bake for 25-30 min. Cake is done when a toothpick comes out clean.
  • I just came up with this one tonight. I made cupcakes. They turned our great, very tender and tasty. I will post the Maple Brown Sugar Frosting after I have tinkered with it a bit.

    natural applesauce is easy to find. It just means that no additives or preservatives have been added, no spices or sugars either.
