"This cake conjures up the taste of the Caribbean".That's how they described it on 101 cakes&bakes from GoodFood magazine,from where I got the recipe.I made some additions and it was really great.

Ingredients
  • 350 grams self raising flour
  • 1 tsp bicarbonate of soda
  • 2 tsp mixed spice (I used 1tsp ginger + 1 tsp nutmeg)
  • 175 grams light brown sugar
  • 4 eggs
  • 200ml sunflower oil
  • 2 bananas, mashed
  • 100 grams pineapple, very finely chopped
  • Finely grated rind and juice of 1 orange
  • 100 grams walnuts, roughly chopped.
  • Frosting:
  • 2 (200grams) medium fat soft cheese, at room temperature.
  • 50 grams butter, softened
  • 200 grams icing sugar.
  • 3 medium bananas.
  • 2 tbsp caster sugar.
  • ½ tsp lemon juice

Directions
  1. Preheat oven to 375F.Butter and line two 20 cm cake pans. Sift flour in a large bowl
  2. With the soda, spices and sugar.
  3. Whisk the eggs and the oil until smooth. Stir the egg mixture in the flour mixture
  4. With the banans, pineapple, orange rind and juice and walnuts; stir well. Divide the
  5. Mixture in the pans. Bake 45 minutes, remove from pans and cool.
  6. Frosting:
  7. Beat the soft cheese and butter till smooth and combined, gradually add the icing sugar
  8. To give a smooth frosting. Spread half of the frosting over one cake, cut one banana into
  9. Thin slices and arrange over frosting. Put the other cake on top. Spread over the remaining frosting. Arrange caramelized bananas on top (see directions).

  11. Line a cookie sheet with greased foil, Cut 2 bananas into thin slices. Toss slices with
  12. Lemon juice and sugar in a bowl and arrange in the cookie sheet. Put the sheet under
  13. The broiler for 2-3 minutes till bananas is caramelized, cool.

I just baked this cake . It smells great esp the ginger and nutmeg ..... and the fruits just compliments each other . I substitute butter n' sunflower oil for rich and fruity olive oil ... Thx for the recipe : )
