How to make it

  • Mix eggs, sugar and salt in a 2 quart saucepan.
  • Stir in milk gradually with a metal spoon.
  • Cook 15 - 20 minutes on medium heat. Stir constantly until soft custard just coats the back of the spoon.
  • Remove from heat and add vanilla.
  • Place pan in cold water to let custard cool. Beat mixture if it begins to curdle.
  • Cover and refrigerate 1 - 2 hours. Can be served warm.
  • Beat whipping cream, powdered sugar and vanilla in a chilled bowl until stiff.
  • Add 1 cup whipped cream, rum and coloring to custard mixture.
  • Drop remaining whipping cream mixture by mounds onto eggnog and sprinkle with nutmeg.

    Love eggnog but the thought of drinking raw eggs is not a favorite of mine, like your recipe since it is cooked some. Great post, will be making this one.
