This is one of my favorite tapas; I first fell in love with Spanish cuisine when I lived in Seville for 9 months. This classic tapa is found in every region of Spain. Make sure you have a fresh loaf of bread to dunk in the garlicky sauce.

Ingredients
  • 1/2 - 3/4 pound shrimp, preferably very small, shelled
  • coarse salt
  • 8 tablespoons olive oil
  • 3 large cloves garlic, peeled and very coarsely chopped
  • 1 dried red chili pepper, stem and seeds removed, in 2 pieces
  • 1/2 teaspoon paprika
  • 1 tablespoon minced parsley

Directions
  1. Dry the shrimp well.
  2. Sprinkle salt on both sides.
  3. Let sit at room temperature for 10 minutes.
  4. Heat the oil in four ramekins or one shallow 8 inch casserole.
  5. Add the garlic and chili pepper.
  6. When the garlic starts to turn golden add the shrimp.
  7. Be careful not to overcook.
  8. Cook over medium-high heat.
  9. Stir for about 2 minutes or until the shrimp are just done.
  10. Sprinkle in the paprika and parsley.
  11. Serve immediately.
  12. Provide lots of good bread for dipping in the garlic sauce.

I made this tonight. It is simple to assemble and is quite delicious. I misread the ingredients and only had red pepper flakes available. It spiced things up a bit.

I have some frozen shrimp in the freezer, will have need to defrost them first before cooking? They are the tiny little ones!
