Easy Pot Pie Recipe
I'm not the best with pie crusts so I use pre made ones, you can make your own if your inclined.

Ingredients
  • 2 (10 3/4 oz.) cans cream of potato soup
  • 1 (16 oz.) can or pkg. drained mixed vegetables- I pick the peas out.
  • 2 cups cooked, diced chicken - rotisserie chicken is very tasty
  • 1/2 cup milk - 1/2 & 1/2 or cream
  • 1/2 tsp. thyme
  • 1/2 tsp. black pepper
  • sprinkle of salt
  • 2 (9 inch) frozen pie crusts, thawed

Directions
  1. Combine first 6 ingredients. Spoon into prepared pie crust sprinkle with a little salt to taste.
  2. Cover with top crust; crimp edges to seal. Slit top crust.
  3. Bake at 375 degrees for 40 minutes. Cool 10 minutes before cutting so it's not so runny.

Sunny this sounds so good and so easy to make! Here in Alaska our CHICKEN is SALMON (ha!) Im going to try a little twist and add "alaska chicken" for something new around here! We are having the perfect warm and wet weather around here (global warming?)for this! awesome post!


I made this the other night with salmon and it came out spectacular! I am going to use it regular with all my left overs - we loved it!
