Oyster Chowder Recipe

Ingredients
  • 8 oz raw, shucked oysters
  • 4 oz butter
  • 1 small onion, sliced thinly
  • 1 small stalk of celery with leaves, diced
  • 18 oz can of clam chowder, condensed
  • 4 oz creamed corn
  • 1 quart milk
  • salt
  • pepper
  • flour
  • parsley
  • bacon bits

Directions
  1. Drain oysters in colander, saving liquid.
  2. Heat large frying pan with the butter in it on medium heat.
  3. When hot, add onion, celery and 3 tablespoons flour.
  4. Fry for 2-3 minutes until transparent and limp. Do not brown.
  5. Add drained oysters and fry a minute or two until edges curl a bit. Better to under-cook than over-cook as they will shrink to nothing if boiled.
  6. Add liquid from oysters and the can of clam chowder and the creamed corn.
  7. Use the milk to clean out the can of clam chowder and then add it and rest of milk to chowder.
  8. Season with salt and pepper and add chopped parsley on top to garnish.
  9. Heat thoroughly but do not boil. Stop heating when you get the first signs of bubbling.
  10. Add a a dozen or so cooked bacon bits for a real treat!
  11. Enjoy....
