Oyster Chowder

- 8 oz raw, shucked oysters shopping list
- 4 oz butter shopping list
- 1 small onion, sliced thinly shopping list
- 1 small stalk of celery with leaves, diced shopping list
- 18 oz can of clam chowder, condensed shopping list
- 4 oz creamed corn shopping list
- 1 quart milk shopping list
- salt shopping list
- pepper shopping list
- flour shopping list
- parsley shopping list
- bacon bits shopping list
How to make it
- Drain oysters in colander, saving liquid.
- Heat large frying pan with the butter in it on medium heat.
- When hot, add onion, celery and 3 tablespoons flour.
- Fry for 2-3 minutes until transparent and limp. Do not brown.
- Add drained oysters and fry a minute or two until edges curl a bit. Better to under-cook than over-cook as they will shrink to nothing if boiled.
- Add liquid from oysters and the can of clam chowder and the creamed corn.
- Use the milk to clean out the can of clam chowder and then add it and rest of milk to chowder.
- Season with salt and pepper and add chopped parsley on top to garnish.
- Heat thoroughly but do not boil. Stop heating when you get the first signs of bubbling.
- Add a a dozen or so cooked bacon bits for a real treat!
