How to make it

  • Drain oysters in colander, saving liquid.
  • Heat large frying pan with the butter in it on medium heat.
  • When hot, add onion, celery and 3 tablespoons flour.
  • Fry for 2-3 minutes until transparent and limp. Do not brown.
  • Add drained oysters and fry a minute or two until edges curl a bit. Better to under-cook than over-cook as they will shrink to nothing if boiled.
  • Add liquid from oysters and the can of clam chowder and the creamed corn.
  • Use the milk to clean out the can of clam chowder and then add it and rest of milk to chowder.
  • Season with salt and pepper and add chopped parsley on top to garnish.
  • Heat thoroughly but do not boil. Stop heating when you get the first signs of bubbling.
  • Add a a dozen or so cooked bacon bits for a real treat!
  • Enjoy....
