How to make it

  • Brown the ground beef in a large skillet over medium hot flame. Drain and set aside.
  • Put all the remaining ingredients except the meat and spaghetti into a large stock pot. Cook on low heat for 1/2 hour, stirring occasionally.
  • Add the beef and cook for 3-4 hours on medium low heat, stirring occasionally.
  • Bring a large pasta pot of water to a boil. Drop in spaghetti and cook until it reaches your desired hardness. Drain spaghetti in a colander.
  • Add the spaghetti to the brew just before serving. Mix it in and serve it all as one.

    The last couple of years I've been adding Bloomers Chili Base. And a little extra Bloomers Chili Powder and McCormick Cumin. Extra Garlic and Onions. And a quarter of a Green Pepper fine diced, a little Cinnamon and some Semi Sweet Chocolate Chips. Cracked Pepper and Oregano.

    A couple of comments, not gospel, as I don't think there is a Chili bible.

    As I understand it Cincinatti Chili includes a dollop of spaghetti in the bottom of the bowl. Red beans are normally a compliment not a basic part of the brew.

    Louisville Chili has the beans in the brew and the spaghetti is added to the mix late in the cooking process.

    I'm also from Louisville, KY, but I didn't even know that Louisville chili was a distinct chili subgenre! My mom would always cook the spaghetti in the chili, and we'd eat it with lots of cheddar cheese.

    I'm from Louisville, Ky. People in all other states that I've been to think I'm crazy when I tell them my chilli hs spaghetti noodles in it! They said, that's spaghetti not chilli! LOL! This recipe definitely made me homesick! I'm making it today! Thanks for sharing!
