How to make it

  • Crust:
  • Combine crushed wafers and butter.
  • Press mixture firmly onton bottom and up sides of a 9 inch pie plate.
  • Pie:
  • Combine marshmellow creme and brandy; beat smooth with hand mixer.
  • Fold in chopped cherries.
  • Beat 2 cups of the whipping cream to soft peaks; fold into marshmellow mixture.
  • Turn into crust.
  • Whip remaining cream and cherry juice; using pastry tube and tip, pipe atop pie in center of pie.
  • Garnish with whole cherries.
  • Feeze overnight.
  • Serve directly from freezer.

    Sounds so lovely! Pity I have never seen marshmallow cream in South Africa. What is it? Could I substitute it with something?
